Bed and Breakfast

There's something deliciously naughty about having breakfast in bed on a Saturday... and when pancakes are involved it's practically a crime. Well, one you can't be locked up for anyway.

But to do the crime you must first do the time. Lucky for you, prep and cooking time is quick and simple.

Ingredients
 
1 cup self-raising flour
1 cup milk
2 free range eggs
¼ cup sugar
6 shakes of ground cinnamon

*Makes approximately 10 pancakes.
Do the time

1.      Combine all the ingredients in your mixing bowl.
 

 
2.      Mix well using your electric mixer until your mixture is smooth. I use my trusted Kenwood but any mixer should do the job!
 
 
3.      Spoon the mixture into a heated frying pan using a soup ladle (approximately ¾ full of mixture).  Remember to tilt the frying pan so that the mixture spreads evenly in a circle.

 

4.      When most of the mixture forms bubbles then the pancake is ready to flip. I usually leave the second side in the frying pan for 20 – 30 seconds before removing.
 
 
5.      Continue the above steps until you have used all of the mixture.

My tip
: Don’t forget to sprinkle a touch of cinnamon sugar on the finished pancake – it adds to the flavour!

Just call me Pollyanna

I'd like to begin as if we are old friends; catching up over our weekly coffee in the quirky café on James Street or reading each other's personally black-inked, blue lined, white paper letters. I'm a bit of an old-fashioned romantic, an idealist - I guess you can call me a regular Pollyanna.
There's something decidedly mellow about the end of summer. There's that cool fresh feeling in the air where you know the sun has stopped spoiling you as it always does over the heart of the summer months and the trees show-off their array of golden earthy coloured pelts during Mother Nature's equivalent of New York Fashion Week - Autumn.
Today is one of those days. The sun has hidden behind the sheet of dense white-grey clouds - clouds daring to shower us with wet kisses - all the while weaning us from its warmth and preparing us for the winter months to come.
But I find that it's on these mellow cool days that a hot, frothy pick-me-up or two does the trick. My husband - and a Latté! What ever your pick-me-up, I hope it finds you when you need it most on your mellow day...
